Fruitful Noir: A Signature Olive Oil Our signature "fruité noir" olive oil embodies the heritage of authentic taste with its rich and complex aromas of black olive, cocoa, sourdough bread, cooked artichoke, and truffle. This oil is celebrated for its remarkable smoothness and enduring finish, offering a sensory journey through the traditional flavors of Provence.

Traditional Maturation Process The unique character of our "fruité noir" is achieved through a traditional maturation process seldom practiced today. Freshly harvested olives are carefully stored in granaries where they undergo a controlled fermentation process, devoid of air. This technique not only enhances the olives' fruitiness but also softens the natural sharpness found in "green fruity" olive oils, resulting in a delicate balance that is both rich and inviting.

Proud Producers of "Fruitful Noir" Moulin de Cornille takes pride in being the leading French producer of "fruité noir" olive oil, with over 90% of our production dedicated to this exquisite variety. Our oils are available under the "Appellation d'Origine Protégée" (A.O.P.) Vallée des Baux de Provence for both the traditional "Black of Cornille" and our olive oil of France labels.

Expanding Horizons with Diverse Offerings Alongside our famed "fruité noir," we also produce an Extra Virgin Olive Oil A.O.P. "Vallée des Baux de Provence" in "fruité vert." This variant features vibrant notes of raw artichoke and freshly cut grass, backed by the subtle complexity of four local olive varieties and a hint of spiciness.

Our selection extends to an organic olive oil and two single-variety oils: Grossane and Picholine, each crafted from freshly crushed olives without any deliberate storage, capturing the pure essence of the fruit.
