Discover the CORNILLE Mill


It is in a Provençal oil mill several times centenary (XVIIth century),
located in the heart of Provence, that our olive oils are produced.


The olive oil "fruité noir" of CORNILLE mill or the heritage of an authentic taste. This olive oil has a traditional taste with aromas of black olive, cocoa, sourdough bread, cooked artichoke, truffle... a great sweetness and an exceptional length in the mouth!


The authentic "fruité noir" olive oil is obtained after the olives are matured in granaries, a traditional storage method that has become rare. The olives are stored in batches of 10 tons, for 4 to 5 days. Anaerobic fermentation (without air) occurs, releasing energy and increasing the temperature. This unique process enhances the fruitiness of the olive while reducing the pungency or bitterness that can be found, for example, in a "green fruity" olive oil.


The CORNILLE mill is the largest French producer of this nectar with the flavors of yesteryear, with more than 90% of its production in "black fruity" olive oil.
The "fruité noir" virgin olive oils are available in the "Appellation d'Origine Protégée" (A.O.P.) Vallée des Baux de Provence " and in traditional vintage: the Black of CORNILLE (Olive oil of France).


The CORNILLE mill also produces an Extra Virgin Olive Oil A.O.P. " Vallée des Baux de Provence " in " fruité vert " with aromas of raw artichoke, cut grass, a beautiful complexity linked to the 4 varieties of olives of the soil and a light spiciness.


The range also includes an organic olive oil and two single variety olive oils: Grossane and Picholine.
These olive oils are made from freshly crushed olives, without any voluntary storage.
